These Almond Upma Hash Browns Will Change a Your Game



Who does not wish to bite into those light brown, crispy and crunchy hash browns no matter at which meal? What if we told you now, your hash browns can come in the nuttier and crispier version? Try Chef Manish Mehrotra’s recipe of an Almond Upma Hash Browns once, and you will be a hooked! They work for a breakfast, a light snack or also  a side at lunch or dinner!


Almond Upma Hash Browns


Prep time: fifteen minutes


Cooking time: forty five minutes


Serves: four 


Ingredients


  •  1 cup almond flour


  • ¼ cup semonlina


  • ½ tbsp ghee


  • Desi ghee/olive oil for grilling


  • 3-4 curry leaves, roughly torn


  • ½ tsp mustard seeds


  • ½ tsp dal urad, skinned


  • 2 tsp finely-chopped ginger


  • 2 tsp chopped coriander leaves


  • ½ cup chopped onions


  • 1 tsp chopped green chilli


  • 4 tbsp toasted sliced almonds


  • 1 tbsp grated fresh coconut


  • Salt to taste


  • 200 ml water


 Technique 


Heat the ghee over a medium flame in a pan. Once it is a hot, add in the mustard seeds permit to them splutter.

Add the urad dal, a torn curry leaves, grated coconut, chopped ginger, garlic, green chilli and onions. Sauté the mixture until it turns a fragrant and golden.

To the fragrant mixture, add in the semolina and a dry roast it with the mixture for 2 minutes so that the flavors obtain infused. Next, add in the almond flour and roast for a some minutes so you get that nutty aroma.

Pour in the water and season the mixture with a salt. Stir continuously and cook it until it is porridge such as in consistency. Once you have the consistency, turn the heat off and add in 1 tablespoon of the toasted sliced almonds and chopped coriander leaves and mix them well.

Grease a baking tray with the ghee or oil and spread the mixture evenly over it. It should be spread about half an inch in thickness or a little more. Sprinkle the remaining almonds on the mixture and permit it cool.

Once the mixture is cooled, cut the mixture into a desired bite-sized shapes – round or square.

Grill the bites on a non-stick flat pan, brushing with the desi ghee/olive oil. Do this on low heat to achieve the proper light golden colour and crisp texture like a hash brown.

Serve warm with a your choice chutneys.
